By using spices, any cuisine can become Ayurvedic

India has always been like a treasure trove of spices, from where spices and herbs have been imported for centuries. Indian spices are used around the world and they enrich the taste of European food as well.

Ayurveda, the ancient science of life emanating from this environment, has defined them in great detail in terms of impact, digestion, and healing effects. It went a step further than other traditional medical systems and defined their effects on the individual constitution or vata, pitta in kapha.

By knowing the effects of spices on doshas, ​​we can choose them correctly to our body needs.

Many modern problems with digestion, body acidity, inflammation, increased presence of harmful bacteria and fungi, immunity, high blood sugar, as well as common problems such as colds, coughs, flatulence, heartburn, headaches, insomnia, nausea, abdominal pain and others, can be cured with proper use of spices.

Today, spices are known and available, but it stops when we have to prepare them or choose them appropriately. Spices are added to drinks, food and can be consumed with various drinks. By using spices, any cuisine can become Ayurvedic.

Ayurveda in translation means the science of life. Ayurveda ˝Ayur˝means life and ˝Veda˝means science. Ayurveda is a thousand-year-old medicine that is still present in India today. Its purpose is to cover the SOUL, MIND, EMOTIONS and BODY, and bring them back into balance.


Five elements

Ayurveda is based on the premise that there are forces, elements and principles in nature that comprise it, hold it together and allow it to function and flow as it does. These same dynamics are also at play in human beings, since we are ultimately a part of nature. According to Ayurveda, beside the elements of air, water, fire and earth, the universe has a fifth element – the lightest of all – known as ether or space. Together, these elements are not interpreted literally, but as principles that allow us to perceive the nature of existence and the universe. Everyone has their own meaning in terms of life.
Air is a movement that puts other aspects of design into existence, fire is a force that produces heat and light – essential for life, water binds everything together like glue, earth is like matter itself and ether is like a void between matter.

Ayurvedic doctrine says that all organic matter – plants, grains and animals – are formed from the Earth’s elements, which give birth to all other substances. The doctrine also assumes that all five elements are present in all forms: frozen water becomes solid as Earth, fire melts back into water, and turns it into water vapor, which disappears into air and ether.


5 senses = 5 elements


The five human senses interact directly with the elements. Sound is transmitted through the ether, air, which according to Ayurveda refers to the nervous system, is reflected in touch, fire, which we see as light and color, refers to sight, water to taste (since a dry tongue cannot taste food) and Earth , which is associated with the sense of smell.

Doshas


These five elements are visible in the body in the form of three main types of mind / body – known as doshas. Dosha is a Sanskrit word for force or disorder. Doshas exist in all substances and are composed of various combinations of five elements.

These are:
vata (air),
pita (fire) and
kapha (water).


Doshas affect all mechanisms of the body, both physiological and chemical. Most people have a combination of all doshas, but they usually have a predominant dosha that determines their body type and temperament. It is also possible that we have a dosha in imbalance, which leads to a disorder in the body and mind. The more balanced the doshas, ​​the healthier the person. Vata is the lightest dosha and is depicted in blue, pita is medium and depicted in red, and the kapha, which is the heaviest, is depicted in yellow. Someone with a predominant vata energy tends to be lean, restless, and creative. The pita type is mostly a happy middle, and kapha people tend to be slow and lazy. Doshas are combinations of elements: vatta is ether and air, pitta is fire and water, and kapha is water and Earth.

Indija je od nekdaj veljala za zakladnico začimb, od koder so že v prejšnjih stoletjih uvažali arome, ki so bogatile okus tudi evropske hrane. Ajurveda, starodavna znanost o življenju, ki izhaja iz tega okolja, jih je zelo podrobno opredelila z vidika vpliva na organe, prebavo in zdravilne učinke. Šla je še korak dlje od ostalih tradicionalnih medicinskih sistemov in opredelila njihove vplive na individualno konstitucijo oz. vata, pitta in kapha došo. S poznavanjem učinkov začimb na doše, jih bomo pravilno izbirali.

Številne sodobne težave s prebavo, zakisanostjo telesa, vnetji, povečano prisotnostjo škodljivih bakterij in glivic, imunostjo, povišanim krvnim sladkorjem in pa tudi običajne težave kot so prehlad, kašelj, vetrovi, zgaga, glavobol, nespečnost, slabost, bolečine v trebuhu in druge, je možno s primerno uporabo začimb pozdraviti.

Danes so začimbe znane in dostopne a se ustavi, ko jih moramo pripraviti ali primerno izbrati.

Začimbe dodajamo v napitke, hrano ali jih uživamo z različnimi tekočinami. Z uporabo začimb lahko tudi slovenska kuhinja postane ajurvedska.

Ajurveda v prevodu pomeni veda o življenju.  Ayurveda ˝Ayur˝pomeni življenje in ˝Veda˝pomeni znanost. Ajurveda je več tisoč let stara medicina, ki je še danes prisotna v Indiji. Njen namen je, da pokriva DUŠO, UM, ČUSTVA IN TELO, ter jih vrača v ravnovesje.

Pet elementov

Ajurveda temelji na filozofiji, da so vsi elementi v vesolju, isti elementi, ki sestavljajo človeško bitje in da je njegovo zdravje odvisno od ravnovesja teh elementov. Po ajurvedi ima vesolje, poleg elementov zraka, vode, ognja in zemlje, še peti element, najlažji od vseh, znan kot eter ali prostor. Skupaj se ti elementi ne razlagajo dobesedno, ampak kot načela, ki nam omogočajo, da zaznavamo naravo obstoja in vesolja. Vsak ima svoj pomen v smislu življenja.

Zrak je gibanje, ki postavlja druge vidike oblikovanja v bivanje, ogenj je sila, ki proizvaja toploto in svetlobo, bistveno za življenje, voda povezuje vse skupaj kot lepilo, zemlja je kot snov sama in eter kot praznina med snovjo.

Ajurvedska doktrina pravi, da so vse organske snovi – rastline, žita in živali – oblikovane iz Zemljinih elementov, ki, po njenem prepričanju, dajejo rojstvo vsem ostalim snovem. Doktrina ravno tako predpostavlja, da je vseh pet elementov prisotnih v vseh oblikah: zamrznjena voda postane trdna kot Zemlja, ogenj jo stopi nazaj v vodo in jo spremeni v vodno paro, ki izgine v zrak in eter.

5 čutil = 5 elementov

Pet človekovih čutil sodeluje neposredno z elementi. Zvok se prenaša skozi eter, zrak, ki se po Ajurvedi nanaša na živčni sistem, se odraža v dotiku, ogenj, ki ga vidimo kot svetlobo in barvo se nanaša na vid, voda na okus (saj suh jezik ne more okusiti hrane) in Zemlja, ki je povezana z občutkom za vonj.

Doše

Teh pet elementov je v telesu vidnih v obliki treh glavnih tipov uma/telesa – znanih kot doše. Doša je sanskrtska beseda za silo ali motnjo. Doše obstajajo v vseh snoveh in so sestavljene iz različnih kombinacij petih elementov.

To so:

vata (zrak),

pita (ogenj) in

kapha (voda).

Doše vplivajo na vse mehanizme telesa, tako fiziološke kot kemične.

Večina ljudi v sebi nosi kombinacijo vseh doš, vendar imajo po navadi prevladujočo došo, ki določa njihov tip telesa in temperament. Možno je tudi, da imamo došo v neravnovesju, kar vodi v motnjo v telesu in umu. Bolj uravnovešene kot so doše, bolj zdrava je oseba.

Vata je najlažja doša in je upodobljena z modro barvo, pita je srednja in upodobljena z rdečo in kapa, ki je najtežja, je upodobljena z rumeno barvo. Nekdo s prevladujočo vata energijo se nagiba k temu, da je suh, nemiren in kreativen. Pita tip je v glavnem srečna sredina, kapha ljudje pa so nagnjeni k temu, da so počasni in leni. Doše so kombinacije elementov: vata je eter in zrak, pita je ogenj in voda ter kapa voda in Zemlja.
